(adapted from Pear Shortcake Squares P136 The Failsafe Cookbook)
sal says my favourite dessert... so far!
250g self raising flour
1 beaten egg
2 tsp milk
1 can of pears canned in syrup, blended or 3 fresh ripe pears, sliced and stewed in 3 tsp sugar
Preheat the oven to 180C = 160C fan = 350F = Gas mark 4 1. Sift the flour in a bowl and rub in the butter till it is like breadcrumbs. 2. Add the sugar, egg and milk and knead until it is a firm dough. 3. Divide into 2 and allow to rest in the freezer for 15 mins. 4. Roll out one piece of the dough and carefully use it to line a greased small baking tray or tin. 5. Spread the pear mixture on top. 6. Roll out the second piece of dough and place it on top of the shortcake. 7. Bake for 25 mins.
SAL's TIP: Serve with natural yogurt for a delicious dessert
SAL'S TIP: use full-fat milk for a creamier result
6 oz rice
2 tbs sugar
3 tsp butter
Preheat the oven to 180° = 350° = 4 = Moderate/Medium = 160° 1. Grease a large pudding bowl with butter. 2. Wash the rice. 3. Add all the ingredients to the bowl and mix well. 4. Bake for 1 hour 30 mins. 5. Enjoy, perhaps serving with tinned pears to add a different texture.
tia: I am salicylate-sensitive and I also have to avoid foods that will bring on a gout attack...I am so limited help!
