Salicylate Sensitivity or Salicylate Intolerance is a food intolerance which causes adverse health problems following the consumption of high salicylate food.
That was my attempt to summarise Salicylate Sensitivity in one sentence. The actual definition is actually broader.
People with Salicylate Sensitivity react when they come into contact with what is normally perceived as a normal amount of salicylate. This is not an instant reaction like in allergy but the amount of salicylate builds up in your body till it reaches a point where adverse health problems occur. It has been likened to a bucket, you can keep filling a bucket again and again but it reaches a point where it overflows ie. symptoms appear.
The level of salicylate in the bucket reaches overflow and symptoms appear.
Salicylates are natural chemicals found in plants- in many common vegetables, fruits and herbs. They serve as a natural immune hormone and preservative, protecting the plants against diseases, insects, fungi, and harmful bacteria.
Salicylates can also be found in many medications, perfumes and preservatives. Both natural and synthetic salicylates can cause health problems in anyone when consumed in large doses. But for those who are salicylate intolerant, even small doses of salicylate can cause adverse reactions.
Salicylates are a derivative of salicylic acid (aspirin).
